Pork Loin with a vein of fat across the middle.?

I recently found a very inexpensive pork loin that was purchased frozen. After thawing this pork loin I found a vein of fat that runs length wise on the loin and pretty much down the middle. When I cross cut the loin it falls apart at the fat vein. Any suggestion on how to cook this other than making pork medallions?
